Chaource is a soft cheese made from whole cow milk (which graze in the Champagne wetlands) with a fragrant rind. The cheese is slightly salty, creamy and supple, and has a chalky interior with a stronger, aged taste under the rind.The gently-salted central pate has a light taste and a characteristic "melt-in-the-mouth" texture.

Affinage is usually between two and four weeks and the cheese is generally eaten young.
