The legend says the Mimolette is originally made from Netherland and the recipe has been given by a Dutch soldier to a French Lady due to her power of seduction. The cheese is now made in North of France. In the area of Lille, cheesemongers have strong skills to mature the mimolette (Brushed and returned). It is an artisan production. The cheese is artisanaly made. The affinage is made by Ceasar Losfeld (3rd generation of affineur).
