Before fermentation, the grapes are macerated for 4-6 days at a temperature between 0-4°C . Afterwards, the grapes are fermented for 10-14 days at a controlled temperature of max. 24°C to let to the fruitiest elements express themselves best. |

Vineyard Info
The vineyards are partly located on the slopes of Monte Cetona, in the heart of the green hills and vineyards of the Tuscan district known as Valdichiana. They are located in the southeasetern part of Tuscany, far away from the coasts, under Cetona and San Casciano municipalities.The soil is composed mainly of calcareous clay and the main grape variety planted here being the Sangiovese, supported by smaller quantities of Merlot and Cabernet Sauvignon. These terrains derive directly from the deep sea wather that emerged during geological era of Pliocene. All the vineyard’s operations - from winter pruning, to bunch-thinning in summer are carried out by expert local hands.
