Harvest method | Mechanical. Harvested mechanically using a New Holland destemming machine. It is a brand new machine which is extremely gentle on the fruit with our desire to remove all the stalks and leaf from the pick. 2021 Eden Hall Springton Shiraz was blended from 3 Shiraz blocks on the Eden Hall Vineyard. Picked between 7th April and 14th of April 2021. The fruit was destemmed and spent 9 days on skins in an open fermenter. Regular pump overs to promote colour and intensity of fruit. It was then transferred to 100% French oak barrel (10% new) for 12 months before bottling. |

Vineyard Info
The Eden Hall vineyard was established in 1997 in the high country of the beautiful Eden Valley. In total there are 33 hectares under vine with red varieties consisting of Shiraz, Cabernet Sauvignon, Cabernet Franc, and white varieties including Riesling, Viognier and more recently Grüner Veltliner. The Shiraz and Cabernet Sauvignon vines are now 26 years old.
Our winemaking methods are traditional but our vineyard management is one of regenerative farming practices. Regenerative agriculture implies more than just sustaining something, but rather an active approach to rebuilding or regenerating a broad ecological and environmental system towards full health and an open ended process of ongoing improvement and positive transformation. We are always trying to enable the natural system and allow mother nature to do what she does best. We have eliminated all synthetic fertilisers from our practices and brew compost teas to promote soil health and biota. We have the largest planting of a multi mix native grass cover crop in Australia in a vineyard which provides habitat to declining bird species, improves the soil food web, enhances beneficial predatory insects and improves water filtration amongst many other benefits. We are accredited under the Australian Sustainable Wine growing scheme. (SWA)
