Soil with a bottom that has sufficient moisture retention that allows the vineyard to be managed without external irrigation inputs. • Vineyard management: mechanical interventions are limited to the maximum. All the tasks, except for the sanitary protection of the vines, are carried out by means of manual interventions that fully respect the care of the grape and the environment. Highlight the work of:
1. bunch thinning, in which only bunches with maximum quality potential are left, and
2. mechanical harvest at night, respecting the absence of light and moments of lower temperatures, characteristic of autumn nights, as the essential basis for the aromatic characteristics of the white varieties to be respected and reach the winery in their maximum splendor."
