Beni Sake 50 is brewed from rice polished to 50%. This junmai daiginjo presents a generous, full-bodied structure, yet remains remarkably fresh thanks to its bright, balancing acidity. A junmai ginjo that fully conveys the charm of Aiyama, a rare sake-specific rice. Characterized by its thick sourness and soft, mellow mouthfeel, this sake expresses the individuality and potential of Aiyama, and the storytelling and changes in the different temperature ranges after it is poured into the glass will change and spread the flavor. On the nose, it is floral & fruity (strawberry, mochi), with minerality and fresh acidity.
