Harvest method Manual
Fermentation & maceration Wine made from Nero d'avola grapes that are harvested in late August and early September. Once the grapes are harvested, they are transferred to the cellar, destemmed and vinified softly, then macerated and fermented for 12-15 days, at a controlled temperature of 25 C. After alcoholic and malolactic fermentation, the wine is aged in barriques for 6 months and subsequently stabilized and bottled.
