Distinctive in its truncated pyramidal shape, Valencay is an unpasteurized goats-milk cheese. Its rustic blue grey color is made by the natural molds that form its rind, darkened with a dusting of charcoal. The young cheese has a fresh, citric taste, with age giving it a nutty taste characteristic of goat's cheeses. The texture is smooth and dense with a mild, lemony, and altogether clean flavours.
