The Bleu d'Auvergne is produced on a fairly vast territory between Puy de Dôme and Cantal as well as in cantons located in some neighbouring departments. Created during the 19th century, originally a mixture of curd milk and rye mould, the production of Bleu d'Auvergne has since been controlled. Grazing on the rich and varied lands of the Auvergne Volcanoes, the cows produce a particular milk that will be used to make this cheese so singular.
